The Origin

The Story Behind Fossa

The name Fossa comes from a cat-like mammal found only in Madagascar — a creature as rare and unique as the chocolate that bears its name. Founders Yilina, Charis and Jay tasted their first craft chocolate bar made from Madagascan cacao, and from that moment, the direction of Fossa Chocolate was set.

Handcrafted in Singapore, Fossa Chocolate is built on the belief that great chocolate begins long before it reaches the wrapper — it begins with the farmer, the soil, and the cacao bean itself.

What Bean-to-Bar Actually Means

Most commercial chocolate is made from pre-processed cocoa mass or powder. Bean-to-bar is entirely different. Fossa's team controls every single step of the process — sourcing raw specialty-grade cacao beans, roasting them in-house, winnowing the husks, grinding, refining, conching, and moulding — all in small batches by hand.

It is time-consuming, precise work. That is exactly why it tastes the way it does.

Our dark chocolates contain just two ingredients: cacao and sugar. No vegetable oil. No emulsifiers. No artificial flavourings, food colourings, or chemicals. Fossa sources its cacao from the top 5% of the world's crop — farms that practice agroforestry, pay their workers fairly, and prioritise quality over yield.
