The Ecuador Costa Esmeraldas 80% Dark is one of Fossa Chocolate's most technically demanding single-origin bars — a high-cacao preparation that reveals just how much flavour complexity is possible when you start with exceptional beans.
Costa Esmeraldas is a family-owned 100-hectare farm in Ecuador's Esmeraldas province, growing Ecuadorian Nacional hybrid cacao through a rigorous fermentation and drying process. The five-and-a-half day cascade fermentation, conducted in cedrela wood boxes, produces beans with a remarkably consistent and distinctive aroma. Fossa's 80% preparation strips everything back to highlight what's already there: sweet chestnut, delicate florals, dried figs.
At 80%, this is not a bar for everyone — but for dark chocolate enthusiasts who appreciate origin-forward cacao, it is exceptional. It has a natural sweetness and balance that makes 80% surprisingly approachable. No bitterness for its own sake. Just the full expression of a single estate's cacao.
