Gardenia Flower Green Tea
Gardenia Flower Green Tea is one of Fossa Chocolate's most labour-intensive bars to produce — and one of the most delicate to taste.
The tea used here is made through a traditional Chinese floral infusion method that requires seven separate layering processes: fresh Gardenia flowers from Qianwei in Sichuan Province are alternated with Fuding Da Bai green tea leaves, with each layer requiring time for the fragrance to transfer before the next begins. The result is a tea of complex, candy-like floral sweetness that is fundamentally different from commercial jasmine or floral teas.
Fossa pairs this rare tea with mild, floral Peruvian cacao from the Puerta Pulache region in Piura — a deliberately gentle cacao origin that allows the gardenia's character to come through clearly rather than compete with it. The result is a bar that is refreshing, uplifting, and unlike anything else in the craft chocolate world.
