Fossa Chocolate

Malaysia - Semai Community 72% Dark

$14.49

The Malaysia Semai Community 72% Dark is one of Fossa Chocolate's most ethically significant origin bars — made from cacao grown by the Semai Orang Asli community of Kampung Long B in Pahang, Malaysia, and processed with a level of care and craft that produces something genuinely exceptional.

The cacao is grown pesticide-free in an agroforestry system that preserves natural biodiversity. What makes this origin particularly unusual is the fermentation process: the beans are fermented in used whisky oak barrels for six days, then dried on raised wooden beds in an enclosed greenhouse. The whisky oak imparts a subtle but distinct complexity — sour cherry, oak, walnut — that distinguishes this bar from any other Malaysian single-origin available in Australia.

Fossa has worked directly with this community since 2020. Buying their cacao at premium prices supports the Semai community's continued stewardship of their agroforestry land and traditional farming practices.

Two ingredients: cacao and cane sugar. Nothing else.

Tasting notes: Sour cherry, oak, and walnut from whisky barrel-fermented Malaysian cacao.
