Matcha & Yuzu White - Small Batch
Matcha & Yuzu White is a small batch release from Fossa Chocolate — and one that takes its key ingredient as seriously as any bar in the range.
The matcha used here is "Wakatake" grade from Marukyu Koyamaen — one of Japan's most highly regarded matcha producers, based in Uji in Kyoto Prefecture. Wakatake is the highest culinary matcha grade Marukyu Koyamaen produces: vivid green, rich, with excellent umami balance and none of the bitterness that lower-grade matchas can bring. Fossa uses this in a creamy white chocolate base, then adds candied yuzu peel for a bright citrus contrast.
The result is a bar that is elegant, distinctly Japanese in character, and genuinely premium — a small batch production made in limited quantities. When it sells out, it won't return until the next batch is made.
