Planteray Xaymaca Rum
Planteray Xaymaca Rum is a collaboration between two craft producers who share a commitment to provenance and process — Fossa Chocolate and Planteray Rum, meeting at the intersection of fermentation and flavour.
Planteray Xaymaca Special Dry is a Jamaican-style rum fermented with natural wild yeast and distilled in traditional double retort pot stills — a method that produces rums of extraordinary aromatic intensity, characterised by overripe tropical fruit, funk, and a heavy, textured finish that distinguishes Jamaican rum from all other styles.
Fossa infuses this rum into Tanzanian cacao from the Kokoa Kamili Fermentery — itself a fermented product with its own natural complexity — and makes it into a 72% dark chocolate. The result carries the rum's overripe banana and tropical fruit character clearly, balanced against the cacao's biscuity depth, with a lingering rum finish that makes this unlike any other chocolate bar available in Australia.
