The key to this bar's authenticity is the tangerine peel: Fossa uses 3-year-aged Xinhui tangerine peel from China — the same type used in traditional Chinese herbal medicine and cooking, prized for the way extended ageing transforms its fresh citrus sharpness into a complex, woody, aromatic depth that is utterly distinct from fresh orange peel. Blended with adzuki beans and Malaysian cacao, the result is a chocolate that is immediately recognisable to anyone who has eaten the dish — subtly sweet, mellow, and gently aromatic.
