Sake Kasu Dark
Sake Kasu Dark is one of Fossa Chocolate's most technically intricate bars — a collaboration with artisanal sake curator KuroKura that uses sake kasu (the lees remaining after sake is pressed) from two exceptional Japanese craft breweries.
The white kasu comes from Akishika Shuzo, an ikkan-zukuri brewery that grows its own organic rice and makes sake entirely in-house from field to bottle. The red kasu comes from the brewing of Inemankai by Mukai Shuzo — a one-of-a-kind sake made using a strain of red rice grown in the master brewer's hometown of Ine in rural Kyoto. Both are rarities in their own right.
Fossa blends these two distinct sake kasu into nano-lot cacao from Kelantan, Malaysia — a small batch origin with its own intense character. The result is a dark chocolate that is fruity, nutty, and deeply umami: a bar that rewards the kind of slow, attentive tasting that both fine sake and single-origin chocolate deserve.
