Terada Honke Kaikoshu is one of Fossa Chocolate's most extraordinary small batch releases — a collaboration that brings together two of the world's most carefully made fermented products: exceptional aged sake and single-origin bean-to-bar chocolate.
Terada Honke is a Chiba-based brewery producing natural, old-school sake using entirely traditional manual methods — no industrial shortcuts, no modern additives. Their Kaikoshu is an 18-year aged junmai sake: a rice wine of profound complexity, with notes of preserved plums, warm spices, and the deep, oxidative character that only years of patient cellaring can produce.
Fossa infuses this into Tanzanian cacao from the Kokoa Kamili Fermentery — itself a product of exceptional fermentation craft — and makes it into a 72% dark chocolate. The result is a bar that rewards the kind of slow, meditative tasting that both fine sake and great single-origin chocolate deserve. Notes of preserved plum, warm spice, and an elegantly matured sake finish that lingers long after the chocolate has melted.
