Spicy Mala Dark is one of Fossa Chocolate's most intense bars — a direct hit of the numbing, aromatic heat of mala stir fry, translated into dark chocolate with complete commitment.
Mala (麻辣) — literally "numbing and spicy" — is a flavour profile from Sichuan cuisine built on Sichuan peppercorns and dried chilli. The peppercorn's characteristic numbing sensation (huā jiāo má) combined with the heat of chilli creates a uniquely addictive sensory experience that has swept food culture globally. Fossa creates a homemade spice mix — Sichuan peppercorn, dried chilli, cardamom, bay leaves, cinnamon, star anise, fennel seeds — slow wok-fries it to release its full aroma, then blends it with umami-rich Yuasa soy sauce into oak barrel-fermented Malaysian cacao.
The result is complex, aromatic, genuinely numbing, and completely vegan. A conversation piece at any dinner table, and a bar that demonstrates just how far from conventional the craft chocolate world has moved.
