The Tanzania Kokoa Kamili 72% Dark is one of the bars that made Fossa Chocolate's reputation — and one of the clearest demonstrations of what great cacao sourcing looks like in the final bar.
Kokoa Kamili Fermentery in Tanzania's Kilombero Valley works with nearly 3,000 smallholder farmers, paying above-market prices for wet cacao and conducting their own fermentation and drying using progressive techniques. The result is exceptional consistency and a flavour profile — green apples, biscuit, cream — that is distinctive, complex, and entirely natural.
Fossa's 72% preparation captures this faithfully. The green apple acidity is present but not sharp. The biscuity note is warm and inviting. The creamy finish is the cacao's own natural character coming through — no added milk, no emulsifiers, just two ingredients: cacao and cane sugar.
