Teh Tarik
Teh Tarik ("pulled tea" in Malay) is one of Singapore's most beloved beverages — black tea brewed strong and sweet, mixed with condensed milk, then "pulled" between two containers by a skilled brewer until a thick, creamy froth forms on top. The pulling aerates the tea and subtly changes its flavour, producing a rounded, rich cup that is more than the sum of its parts.
Fossa captures this in a 51% dark milk chocolate using pine-smoked Darjeeling black tea from the Gopaldhara estate in India — an estate known for its single-estate teas of distinctive character — paired with cacao from the Hacienda Limon estate in Ecuador. The pine-smoke of the tea adds a subtle depth that evokes the warmth and complexity of the original drink, while the dark milk base provides the creamy richness of the condensed milk.
