The Philippines Luna 75% Dark is built around one of the rarest cacao varietals Fossa works with — a single-varietal bar from Davao in the Philippines that demonstrates just how unusual specialty cacao can be.
Catongo, also known as Forestero Albino, is a remarkable cacao varietal: the pods and beans are unusually large (up to 3cm), and the flesh is white rather than the typical purple — hence the name "Luna" (moon). After fermentation, the white flesh turns a light, reddish brown, and this unusual colour profile shows through into the chocolate itself. The natural character of these beans is distinctly citrusy and dried-fruit-forward — citrus, dried longan, hazelnut — flavours that persist clearly at 75% in Fossa's preparation.
Two ingredients: cacao and cane sugar. A single varietal, a single estate, a single-origin bar of genuine rarity.
