The Philippines Rehoboth Estate 70% Dark is one of Fossa Chocolate's most personal origin bars — a bar made from cacao that Fossa's founders sought out specifically because of its alluring, powerful flavour, despite coming from trees that most commercial producers would overlook.

The Rehoboth Estate in Calinan, Davao City, is run by Michael and Doris, who operate a wet bean collection and fermentation facility focused on smallholder farmers in the area. For Fossa, Michael and Doris separate out cacao from old native trees — trees that produce smaller pods and beans than the newer high-yielding varieties, but whose cacao has a depth and intensity that modern cultivars rarely match. Tawny port, prunes, red dates: flavours with a richness and complexity that speak directly to the age and character of the original trees.

The estate's name, Rehoboth, means "a well of blessing" — named for Michael and Doris's mission to provide sustainable livelihoods to local farming communities. Two ingredients: cacao and cane sugar.
