The Uganda Semuliki Forest 72% Dark is made from Cocoa of Excellence award-winning cacao — a recognition given to the world's most exceptional specialty cacao origins — and it shows in the bar.
The Semuliki Forest Cacao fermentery works with over one thousand small-scale organic cacao farmers in Bundibugyo, western Uganda, in the shadow of the Rwenzori Mountains. The region's biodiversity is extraordinary — it sits adjacent to the ecosystem that holds the source of the Nile River. The cacao produced here has a distinctive warm, fruity character that Fossa finds particularly suitable for aging: when fresh, the bar has a lively, over-ripened white peach quality; as it ages (ideally stored below 22°C), warm notes of orange peel and cinnamon become increasingly prominent.
Two ingredients: cacao and cane sugar. Organic, fully traceable, Cocoa of Excellence recognised.
