Umeshu
Umeshu is Fossa Chocolate's most quietly complex bar — a dark chocolate infused with Japanese plum wine that reveals its layers only to those who eat it slowly.
Umeshu (梅酒) is made by steeping unripe green Japanese ume plums in liquor — typically sake or shochu — with sugar, over many months. The result is a sweet-tart liqueur with a distinctive stone-fruit character, plum kernel bitterness, and the natural complexity of long maceration. Fossa uses an umeshu made with sake brewed by Ota Shuzo, a Shiga Prefecture brewery known for its careful, traditional production methods.
This umeshu is infused into barrel-fermented Malaysian cacao from the Semai Community — the same whisky oak-fermented cacao used in other bars in the range, chosen for the way its own fruity, complex character interacts with the plum wine. Made into a 72% dark chocolate, the result is a bar of genuine complexity: sweet ume, tart plum, hints of stone fruit kernel, and a long finish. Allow it to melt slowly.
