Xíng Rén Hú
Xíng Rén Hú (杏仁糊) — Chinese almond cream — is a traditional Teochew dessert brought to Singapore by immigrants from Chaoshan in southern China. Silky, ivory-coloured, gently nutty with a subtle floral undertone from apricot kernel, it is one of those desserts that rewards quiet attention.
Fossa's bar is a direct translation. Apricot kernels are toasted and ground, aromatic jasmine rice is incorporated for a smooth, silky base texture, and roughly chopped apricot kernel pieces are folded in for a gentle, playful crunch. The result is a marzipan-scented white chocolate bar — technically a white chocolate base given the use of cacao butter, cocoa butter, and cane sugar — that captures the dessert's characteristic delicacy without any dairy or artificial flavouring.
Fully dairy-free, vegan, and made with four real ingredients. One of the most refined bars in the range.
